- ¼ cup Flourish Protein Pancake Mix (pick your favourite flavour!)
- ¼ tsp baking powder
- 2 tbsp coconut sugar
- 3 tbsp almond milk, room temperature
- 1 tbsp coconut oil, melted
- ½ tsp vanilla extract
- In a microwave-safe mug, whisk together all the ingredients until a smooth batter with no lumps, if formed.
- Bake in the microwave for 1 minute (900W). You may have to increase or decrease baking time by 20 seconds burst depending on your microwave.
- Enjoy immediately with any toppings you desire like chocolate chips, nuts, or frozen yogurt!
