Ingredients
Donuts:
- 1 cup (110g) Flourish Strawberry Shortcake Protein Pancake Mix
- 1/4 cup (60g) Greek yogurt
- 1 egg
- 1/4 cup milk of choice (we used oat milk)
- 1 tsp vanilla extract
- 1 tbsp (15ml) lemon juice
Frosting:
- 1 tbsp milk of choice
- 1 tbsp lemon juice
- 2 tbsp freeze-dried strawberries, powdered (optional, for color + flavor)
- 1/2 cup zero-cal sweetener confectioners sugar
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease a donut pan.
- In a large bowl, whisk together the Flourish mix, Greek yogurt, egg, milk, vanilla extract, and lemon juice until fully combined.
- Transfer the batter to a piping bag or zip-top bag with the corner snipped off. Pipe the batter evenly into the donut pan, filling each cavity about 2/3 full.
- Bake for 10–12 minutes, or until a toothpick inserted into a donut comes out clean and the tops spring back lightly to the touch.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
To Make the Frosting:
- In a small bowl, whisk together the milk, lemon juice, powdered sugar, and freeze-dried strawberry powder (if using) until smooth and pourable. Adjust thickness by adding a touch more milk or sugar as needed.
- Dip the cooled donuts into the frosting or drizzle over the top.
