Healthy Pancakes: Lemon Zest Pancakes

These lemon-infused pancakes with white chocolate-covered strawberries are packed with protein and bursting with flavour. This recipe is a refreshing twist on a breakfast classic - try it at home when you're feeling like switching up your breakfast routine!

  • 1 cup Flourish Buttermilk Pancake & Waffle Mix 

  • 1/3 cup water

  • 1/4 cup vanilla Greek yogurt

  • Lemon zest

  • White chocolate covered strawberries


  • Combine pancake mix with water until it has a thick consistency. Mix in 1/8 cup of lemon zest.

  • Heat a non-stick skillet over medium heat, and add a tsp of oil.

  • Pour some of the pancake batter onto the skillet. After 2-3 minutes, flip the pancake and cook the other side.

  • Repeat step 3 for the remaining batter.

  • Stack the pancakes.

  • Top with Greek yogurt, lemon zest and white chocolate covered strawberries.
