Ingredients
  • 1 cup blueberries
  • 1/4 cup water
  • 1/4 cup light maple syrup
  • 1 large egg
  • 2 tsp coconut oil
  • 1 1/4 cups Flourish Blueberry Protein Pancake Mix
  • 1/4 cup large flake oats
  • 1 tbsp hemp hearts (or chia/flax, optional)

Instructions:
  1. Preheat oven to 350°F. Grease or line a loaf tin.
  2. In a pan, simmer blueberries and water 5–7 min, stirring and lightly mashing the blueberries.
  3. In a large bowl, mix syrup, egg, coconut oil, oats, Flourish pancake mix, and hemp hearts together.
  4. Reserve 1/4 cup of mixture for topping. Press the rest into loaf tin.
  5. Spread blueberry mixture over base. Crumble reserved mixture on top.
  6. Bake 20–22 min, until golden. Cool before slicing.
