    I’m a longtime vegan and was looking for a quick protein pancake mix for those times when I’m busy and not in the mood to make from scratch. This pancake mix is *fantastic*. It mixes into a smooth batter quickly and the pancakes are fluffy, light and delicious. I like to add grated lemon and organic lemon extract. SO good.
