Healthy Recipe: Flourish Pancakes x Nuts For Cheese Waffle & Crème Fraîche Stack

Ingredients
Waffles
2 cups (220g) Flourish Original Plant-Based Protein Pancake Mix
1 cup (240ml) non-dairy milk of choice
2 tbsp (30ml) lemon juice
1 tsp (5ml) vanilla extract
½ cup (40g) Shredded Nuts For Cheese Un-Brie-Lievable Cheese
1 cup (140g) fresh or frozen blueberries
Crème Fraîche
¼ cup (35g) Nuts for Cheese Un-Brie-Lievable Cheese, room temperature
1 tbsp (15ml) warm water
1 tsp (5ml) lemon juice
Berry Sauce
2 cups fresh or frozen berries (we used blueberries & blackberries)
⅓ cup water
2 tbsp (30ml) maple syrup
2 tbsp (30ml) lemon juice
1 tbsp (8g) cornstarch + 2 tbsp (30ml) water

Instructions
WAFFLES
Preheat waffle maker (or iron) according to manufacturer's instructions.
In a large bowl, whisk together Flourish Pancake Mix, non dairy milk, lemon juice, and vanilla extract.
Fold in shredded Nuts for Cheese Un-Brie-Lievable Cheese and blueberries until just combined.
Spray both sides of the preheated waffle iron with nonstick cooking spray.
Pour some of the batter onto the greased waffle iron. Close the lid and cook until the waffles are a deep golden brown and slightly crisp, about 3-5 minutes. Repeat with the remaining batter.
Serve with crème fraîche and berry sauce and enjoy!
CRÈME FRAÎCHE
Soften Nuts for Cheese Un-Brie-Lievable Cheese in a microwave for 15 seconds.
Whisk in warm water and lemon juice until smooth.
BERRY SAUCE
Combine the berries, water, maple syrup, and lemon juice in a small saucepan over medium-high heat. Bring to a boil; lower heat and gently simmer.
Combine the cornstarch with the extra water until dissolved and stir it into the blueberries. Continue to simmer while stirring occasionally, until the sauce begins to thicken and coats the back of a metal spoon.
