Healthy Recipe: Chocolate Chip Cookies

10 tbsp (150g) unsalted butter
¾ cup (120g) brown sugar, packed
1 tsp (5ml) vanilla extract
1 large egg
2 cups (244g) Flourish Buttermilk Protein Pancake Mix
¼ cup (50g) mini chocolate chips + ¼ cup (50g) chocolate chunks
Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside.
In a large bowl, with a hand mixer, cream together butter and brown sugar until light and fluffy, 3-4 minutes.
Mix in egg and vanilla until just combined.
Fold Flourish Buttermilk Protein Pancake Mix until just combined, taking care not to over-mix. Fold in chocolate chips and chunks.
Place bowl in the fridge to let cookie dough chill for about 30 minutes.
When ready, scoop approx 1-2 tbsp of dough, roll into a ball and place on cookie sheet. Repeat with remaining dough.
Bake for 8-10 minutes, until cookies are just turning golden around the edges. Let cool in the pan for a couple minutes before moving to wire racks to cool completely.
