Healthy Pancakes: Yoggu x Flourish Plant-based Stack

½ cup (53g) Flourish Original Plant-Protein Pancake Mix
¼ cup (63g) Vanilla Yoggu! Plant-Based Yogurt
2 tbsp (30ml) non-dairy milk
1 tbsp (20g) Vanilla Yoggu! Plant-Based Yogurt
Berry Sauce:
½ cup (70g) fresh or frozen berries (blueberries, raspberries)
3 tbsp (45ml) water
1 tbsp (15ml) maple syrup
1 tsp (5g) cornstarch + 2 tsp (10ml) water
In a large bowl, whisk Flourish Original Plant-Protein Pancake Mix, Yoggu! Yogurt, and non-dairy milk together until just incorporated.
Heat up a large non-stick skillet or griddle over medium heat. Once hot, add ¼ cup of the pancake batter. Let the pancakes cook for 1-2 minutes, flip and continue cooking for another two minutes.
Once the pancakes are cooked, remove them from the heat and repeat the process until all the batter is used up.
1. In a medium saucepan over medium heat, combine the berries, 3 tbsp of water, and maple syrup. Bring to a boil, stirring frequently.
2. In a small cup dissolve the cornstarch in the 2 tsp of water.
3. Add the cornstarch to the blueberry mixture and stir to dissolve.
4. Gently boil for 5-10 minutes to thicken the sauce. It will continue to thicken as it cools.
Top with Yoggu! and berry sauce, and enjoy!
