Ingredients


  • 1 ½ cups (175g) Flourish Gingerbread Protein Pancake Mix

  • ⅔ cup (95g) coconut sugar
  • 1 tsp (5g) baking powder
  • ¼ tsp (1g) baking soda
  • ¾ cup (180ml) non-dairy milk
  • 1 large egg
  • ¼ cup (55g) coconut oil, melted
  • ¼ cup (65g) greek yogurt 
  • 2 tbsp (30ml) orange juice  optional
  • Zest from 1 orange  optional

Orange Glaze

  • ½ cup powdered sugar

  • 1 tbsp (15ml) fresh orange juice (plus a little more if necessary to thin the glaze)
  • 1 tsp (5ml) vanilla extract

Instructions

  1. Preheat oven to 350F (175C) degrees. Line a loaf pan with parchment paper. Set aside.

  2. In a medium bowl, whisk Flourish, coconut sugar, baking powder, and baking soda together.
  3. In a separate bowl, whisk together milk, egg, coconut oil, greek yogurt, orange juice and zest together.
  4. Add the wet ingredients to the dry ingredients and mix together.
  5. Pour the batter loaf pan and bake for about 40-45 minutes until it rises and a toothpick comes out clean. Remove from pan and place on a wire rack to finish cooling completely.
  6. For the glaze: Mix together powdered sugar, orange juice and vanilla extract until smooth. Drizzle over the top of the loaf and spread towards the sides, if necessary.
