Healthy Recipe: Birthday Cake Pancake Pops

INGREDIENTS

  • 1 cup (144g) Flourish Birthday Cake Protein Pancake Mix
  • ½ cup (120ml) water or milk of choice
  • ½ cup (85g) plain greek yogurt
  • 2 cups (320g) white candy melts
  • Sprinkles *optional

    Instructions

    1.  In a large bowl, whisk together Flourish Birthday Cake Mix and water (or milk) until combined.

    2. Heat a griddle or pan over medium-high heat. Scoop the batter onto the griddle, using approximately ⅓ of the batter (make 3 large pancakes).

    3. Cook until bubbles form, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.

    4. Let the pancakes cool for 5 minutes.

    5. ​​Crumble the pancakes using your hands. Make sure there are no large lumps.

    6. Add in greek yogurt and mix until everything is combined.

    7. Roll out 12 balls and place on a parchment lined baking sheet.

    8. Melt your chocolate by microwaving in increments for 15 seconds until completely smooth.

    9. Dip the end of the cake pop stick into white chocolate and then into the ball. Place in freezer to chill for 20 minutes.

    10. Melt chocolate, take balls out of freezer and dip until coated completely in chocolate. Add sprinkles, if desired.

    11. Refrigerate at least 10 minutes before eating.

    12. Sprinkle powdered sugar on pops and serve with maple syrup. Enjoy!
