Ingredients
Dough
- 1 cup (110g) Flourish Buttermilk Protein Pancake Mix
- 1/2 cup (120g) plain Greek yogurt
- 1 tsp (5g) baking powder
Filling
- 2 tsp (10g) unsalted butter (or coconut oil), melted
- 1 tbsp (15g) coconut sugar (or sweetener of choice)
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2g) cocoa powder
Icing
- 1 tbsp cream cheese
- 1 tbsp Greek yogurt
- Maple syrup, to taste (start with 1 tsp)
Instructions
In a bowl, mix Flourish pancake mix, Greek yogurt, and baking powder until a soft dough forms.
Lightly flour a surface and roll the dough into a rectangle about 1/4 inch thick. (The dough will be sticky, use flour when needed.)
In a small bowl, stir together the melted butter, coconut sugar, and cinnamon. Spread evenly over the dough.
Slice the dough into 3 long strips. Roll each one tightly into a log to form the bunny “body.”
To create bunny ears: gently pull the outer end of the roll out and up to form one ear, rotate, and pull the opposite side up for the second ear.
Pinch the edges and sides together to help the ears hold their shape.Carefully transfer the bunnies to the prepared baking sheet.
Bake for 10–12 minutes, or until the edges are golden brown.
While they bake, make the icing: stir together cream cheese, Greek yogurt, and a drizzle of maple syrup until smooth.
Let the bunnies cool slightly, then drizzle with icing and enjoy!
