Ingredients
- 1 cup blueberries
- 1/4 cup water
- 1/4 cup light maple syrup
- 1 large egg
- 2 tsp coconut oil
- 1 1/4 cups Flourish Blueberry Protein Pancake Mix
- 1/4 cup large flake oats
- 1 tbsp hemp hearts (or chia/flax, optional)
Instructions:
- Preheat oven to 350°F. Grease or line a loaf tin.
- In a pan, simmer blueberries and water 5–7 min, stirring and lightly mashing the blueberries.
- In a large bowl, mix syrup, egg, coconut oil, oats, Flourish pancake mix, and hemp hearts together.
- Reserve 1/4 cup of mixture for topping. Press the rest into loaf tin.
- Spread blueberry mixture over base. Crumble reserved mixture on top.
- Bake 20–22 min, until golden. Cool before slicing.
