High Protein Eggnog Pancakes for the Holidays

Ingredients

  • 2 ¼ (250g) cups Flourish Apple Cinnamon Protein Pancake Mix
  • ¼ cup oats
  • ½ cup Unsweetened Applesauce
  • ¾ cup (175g) Non-Fat Greek Yogurt
  • 2 large eggs
  • Juice of half a lemon
  • 1 cup (150g) Shredded Apples *optional

Instructions

1. Preheat oven to 350°F and line a muffin pan with parchment paper cups.

2. In a large bowl, whisk together applesauce, greek yogurt, eggs, and lemon juice.

3. Add in Flourish Apple Cinnamon Pancake Mix and oats, fold in until just combined.

4. Add shredded apples to batter and fold to combine. Careful to not over-mix.

5. Transfer batter into the individual muffin cups.

6. Bake for 20-25 minutes. A toothpick inserted into the center should come out dry.

7. Cool for 10 minutes, then remove from the pan. Transfer to a wire rack to cool completely.
